orange chicken curry

Ingredients
Instructions

1: Combine 2 tbsp flour, and 2 tbsp curry powder in a bowl. Fry 1 large onion, finely diced in 2 tbsp butter and 1 tbsp olive oil till soft on a med-high heat. Add in curry
powder mixture and cook for 2 min.

2: Whisking continuously, add in 2c of warmed milk.

3: Add in 3 tbsp mango chutney, 3 tbsp tomato puree and 2 tbsp brown sugar. Continue to stir and bring to boil, adding in grated zest and juice of orange, together with 1 tsp salt and 1/2 tsp black pepper.

4: Add in 6 chicken fillets. Cook for 45min on a gentle heat, stirring occasionally.

Serve with boiled rice with a sprinkling of chopped
parsley.
